Traditional Ramen in Hakata consists of white pork based broth and thin straight noodles.
There are various types of soup such as Nagahama ramen's signature light broth to thick bone marrow and lard infused rich flavor. The term ""kaedama"" which means to leave the soup and get seconds on noodle originated in Fukuoka. In recent years aside from the traditional soy sauce and miso based broth made from pork stock, there are also ramen made of chicken and fish broths as well.
