After an apprenticeship at the popular, long-line forming “Hakata Ramen Shin-Shin”, “Hiru To Yoru” opened near Tenjin, just a couple steps away from the Akasaka Subway Station. During the lunch service, it’s a casual ramen shop featuring a double specialty of ramen and champon noodles.


The ramen soup is a creamy type, packed with porcine flavors. It’s very rich, with a slightly viscous mouthfeel. Devoid of excessive grease floating on top, you can experience straight, pure umami of pork bones. Noodles are the standard in Hakata - thin and straight - and its low moisture content renders it light and snappy. The popular champon noodles are made with the same soup stock as the ramen, and served with plenty of vegetables! The special house miso champon is gaining popularity as well.


But don’t stop there, the fried rice is great too! Each rice grain is plump, shining from a coat of eggs and lard. The chopped vegetables each have a voice in this dish, and the seasoning is on point. The best part is that you can order a half size to pair with your noodles.
