Fukuoka’s Soul Food: WEST’s “Motsunabe (Stewed Offal)”!?

“WEST” is a familiar udon shop in Fukuoka. In recent years “udon izakaya” style establishments have been popular - the Udon-ya Tenjin location that’s located along the national road features an izakaya menu from 5pm. Their exceptional stewed offal is all the rage!

The stewed offal is hefty beyond imagination, and includes offal meats, Chinese chives, cabbage, bean sprouts, and fried tofu. The soup is udon dashi that’s comprised of dried baby horse mackerel, baby sardines, kombu kelp, katsuobushi, and mackerel stock. Juicy and delicious small intestine is served with a surprising amount of vegetables. You would think that the final course would be udon here, but the menu also offers champon noodles, rice soup, and cheese risotto. There are also fun offal dishes such as offal jiggae (Korean kimchi stew) and curry-based offal stew.

As for the udon, they serve both thick and thin noodles. Just add the thin noodles and dashi into the stew pot and let simmer to finish the “stewed offal udon”. Note: this noodle does not soak up soup! Not only that, it’ll stay slippery and chewy - you won’t be able to stop eating. There are also tasting menu sets that includes 10 dishes such as stewed offal, edamame, Maruten (fried fish cakes), tamagoyaki (Japanese omelettes), and fried items.
