The representative of famous Tonkotsu ramen in Fukuoka is Nagahama Ramen with clouded Tonkotsu soup with thin noodle. Since thing noodles get soggy easier, “kaedama” system where serving of noodle is small, but you get second serving was started here.

The rules of Nagahama Ramen

1 Buy the ticket from the machine


Ticket are sold at the entrance of the store.

2 Choose the “hardness of the noodle”
When you sit down, you give the ticket to the staff, and you tell how hard you want the noodle cooked. In Hakata dialect,
“Nama” / “Barikata” (= very hard)
“Kata” / “Kata” (= hard)
“Futsuu” / “Yawa” (= soft)
“Yawa” / “Bariyawa” (= very soft)
“Bari” means “very” in Hakata dialect.

3 Use the sesame, pickled ginger, and ramen soup on the table for your taste.




Ramen soup is used to adjust the flavor when you get the second serving of noodle and the soup gets thin.
