A Traditional Hakata Dish, Decked Out With Locally Sourced Ingredients

“Toriden Hakata Honpo” is a large hot pot restaurant with a maximum capacity of 130 seats. Situated right behind the Hakataza Theater, it’s perfect for a post-show meal or for entertaining important guests.

They take pride in their sourcing, and cooking their traditional local specialties using local ingredients. Starting with fresh chicken meat, they use all sorts of carefully curated ingredients from various parts of the Kyushu region. The backbone of hot pot is the soup, and is made over low heat for 6 hours. The creamy soup is sweet and rich with chicken-y sapor. Adding fresh vegetables only intensifies the umami of this dish that is full of Kyushu flavors.

Ponzu is generally soy sauce colored, but “Toriden”’s original ponzu is a golden hue - not too sharp in acidity, but more mellow and deeply flavored. The yuzu pepper is made with ripened yuzu, so it’s a beautiful yellow.

The “Toriden Special Chicken Sashimi (available in the Ume Set only)” and “Flavored Egg”, both available in tasting menus, are scrumptious. The Hot Pot is the main event here, but side dishes like Chicken Karaage and Chicken Tempura are worth note. For lunch, they serve the side dishes in lunch sets like the “Chicken Karaage Set” “Chicken Tempura Bowl” “Oyako Bowl”.
