Udon At A Glance
The monk that started the Jotenji Temple in Hakata had brought back the technique of udon making from China to Fukuoka. As a result, Fukuoka is famous for the land that created the udon and soba (buckwheat noodles). The udon in Fukuoka is known for their soft noodles. They use bonito or mackerel broth along with seaweed brother. In recent years udon noodles with more elasticity are popular. It's also very popular to eat udon as a finisher after you've eaten and consumed alcohol known as the "Udon Izakaya".
